Honduras is one of the forerunners in the coffee industry, a couple of decades ago, it was only a run-of-the-mill commercial beans manufacturer, pricing its beans cheaply for sale. In reality, Honduras has exceptional conditions for coffee farming - microclimate, high altitude, fertile soil, abundant rainfall, a clear distinction between dry and wet seasons, and hardworking farmers. The only issue is the criticism on its dry processing method and transportation problems which have a bearing on the quality of the coffee. However, in recent years, the Honduran government has noticed the importance of the specialty coffee market and proceeded to revamp the Honduran coffee industry, aiming to produce high quality coffee that will help improve the income of farmers.

The Honduran coffee farmers have also been inducted into the specialty coffee industry by participating in the international COE competitions. They are actively improving the quality of their coffee to change the stereotype coffee buyers have of Honduran coffee.Honduras is currently the largest coffee-producing country in Central America. In the past, the reason causing Honduran coffee to be mediocre is the dry processing method. Due to the abundant but unstable rainfall in the mountainous regions, raw beans are unable to dry completely in the last stages of processing. Therefore most processing factories would use machines to dry the beans quickly, which will not only shorten the storage life of the beans, but also cause the beans to lose their flavour.

This lot of beans has been washed processed. After washed processing and fermenting, the beans are submerged in clean water for 12-18 hours, to better and more thoroughly remove sticky residues, allowing the beans to be much cleaner.
